Smoked Lemon Pepper Salmon Sandwich
Summers growing up taught me one thing: there’s no fish quite as irresistible as salmon. I spent several summers at a tiny fishing camp on a river with a name so long it took more time to say than to land a fish in the desert. I fished, caught salmon, and then smoked it. The other thing I used to make was bread and it’s the only homemade bread that came close to our Grace Baking Organic Multigrain with Ancient Grains. I thought of my childhood Summers this week as I made a very tasty Smoked Lemon Pepper Salmon Sandwich, a real treat whether you’re away fishing or at home fishing for compliments. Wonderful, unforgettable and comforting.
- 2 slices Grace® Baking Organic Multigrain with Ancient Grains
- ½ avocado, mashed
- 2 tbsp. chive and onion cream cheese
- 3-4 slices lemon pepper smoked salmon
- ¼ cup microgreens
- Spread mashed avocado on one slice of bread, and spread cream cheese on the remaining slice of bread. Layer smoked salmon and microgreens atop mashed avocado. Top with cream cheese-covered bread slice, the cream cheese side down.
