Smoked Lemon Pepper Salmon Sandwich

Summers growing up taught me one thing: there’s no fish quite as irresistible as salmon. I spent several summers at a tiny fishing camp on a river with a name so long it took more time to say than to land a fish in the desert. I fished, caught salmon, and then smoked it. The other thing I used to make was bread and it’s the only homemade bread that came close to our Grace Baking Organic Multigrain with Ancient Grains. I thought of my childhood Summers this week as I made a very tasty Smoked Lemon Pepper Salmon Sandwich, a real treat whether you’re away fishing or at home fishing for compliments. Wonderful, unforgettable and comforting.

  • 2 slices Grace® Baking Organic Multigrain with Ancient Grains
  • ½ avocado, mashed
  • 2 tbsp. chive and onion cream cheese
  • 3-4 slices lemon pepper smoked salmon
  • ¼ cup microgreens


  1. Spread mashed avocado on one slice of bread, and spread cream cheese on the remaining slice of bread. Layer smoked salmon and microgreens atop mashed avocado. Top with cream cheese-covered bread slice, the cream cheese side down.
